The best book on cooking I've come across. It explains many whys and hows I had unanswered for many years in my life which had let me grasp and understand better why we do what we do in many recipes.
Absolutely recommended.
(Shhh! I got this book for one reason: how to make the best biscuits in the world. I've taken down the relevant info and I plan to try this folding idea soon. I'll get back with you on the result.)
