Jeremy Denk – in addition to being a sterling pianist – has been one of my favorite writers about classical music and piano since his OG blogging days. Denk is uncompromisingly dry, self-deprecating, and idiosyncratic about his experiences as a student & practitioner of the piano. He has never been better at finding the magic, the deep ontological why, in music. Not especially theory- or history-heavy, but I think you'll enjoy this book more if you have some music background.
